Consumers love the sweet taste of sugar and sugar is still king when it comes to sweeteners. Its great taste and performance are hard to match. But many consumers have become increasingly aware of the high price they pay when indulging in sweet-tasting foods and beverages. The connection between what they eat and drink and the high rates of obesity and metabolic disorders in the U.S. are common knowledge. Packaged foods and beverages of all types, sweet or not, can contain lots of added sugars, and shoppers are checking labels for this information and avoiding those products. They especially demand less sugar from functional foods and beverages.
The International Food Information Council’s (IFIC) 2023 Food and Health Report provided further insights about sugar being top of mind for consumers. The survey noted that 72% of respondents said they are trying to limit or avoid sugar intake and that among the 72%, the leading reasons included “to improve my diet in general” (45%), “to avoid gaining weight” (42%) and/or “to lose weight” (40%), and other concerns including oral health and preventing or managing a health condition.
But even with these concerns in mind, consumers don’t want to give up taste, texture or consistency in their favorite products. Those attributes are seriously affected by the sweetening ingredients chosen by formulators and product developers — so how do they meet that challenge?
